My Favorite Drink - Blog

My favorite drink is a little niche, but making its way through American coffee shops. Born in Australia and New Zealand, the flat white is the perfect balance between espresso and milk in my opinion. It has 2 shots of espresso, ideally pulled at 27 seconds with a golden ratio of 17.5 grams in, yielding 35 grams out. It also has 6oz of milk, steamed to a perfect micro-foam texture. Less foam than a latte, and the perfect warm (not too warm) temperature.


The flat white keeps me cool and calm. It lightens up my mood every morning, and gives me a few minutes to slow down and just enjoy my coffee. Drinking coffee is one of my favorite rituals in the morning. For me, it is something to enjoy, something to slow down over. It makes me happy, and I often drink it outside, which is the ultimate calming effect.


The paradox of coffee is such a funny thing. For me, coffee is calming and slows me down. But the ultimate effects of caffeine can trigger things like anxiety or a lifting effect. That’s exactly why I decided to name our mobile coffee bar the Up N Down, touching on that tension that coffee provides for people. There are not a lot of people that think about coffee so deeply, but I do. I see so many connections between the phrase "Up N Down" and coffee.


  • Sip up, and slow down.

  • Amp up, while you calm down.


It also touches on the comical realities of caffeine. Most people experience the rise of energy and focus after their first couple sips. But the reality? You crash a couple hours later. It’s the give and take of coffee. Take the uplift, and give yourself a little afternoon cat nap, LOL. Coffee, like so many things, has that interesting tension. Should I drink it? Is it worth the crash? Is it worth the anxiety? Maybe! For me, it’s an absolute yes.


Coffee is so much more than caffeine for me. It’s a ritual I am not willing to give up, whether it be walking to my favorite coffee shop and ordering my flat white, or making the coffee at home itself. Yes, I love enjoying coffee, but I think I might enjoy making it even more. I love perfecting people's order, and offering them a drink that’s worth drinking. It is so hard to find well-made coffee, and I want to provide it to people. There are only a few spots in Boise that I think are worth visiting, so why not add another! Coffee is an extension of my creativity, and it is so diverse. I have a deep love for coffee and the ups N downs it creates.
